Based on meat and sweet pastries, the traditional cuisine of Morocco is usually quite elaborate. Some of the traditional Moroccan specialties include Pastilla, a pastry made of pigeon meat with layers of thick flaky dough and Harira, a rich soup. Also included are Tajne, a stew prepared from marinated lamb or chicken and is known for its fragrance. Couscous is a preparation based on semolina, which can be combined with vegetables, chicken, egg or lamb. The Hout is the same stew with a combination of fish whereas the Djaja mahamara refers to stuffed chicken with almonds, raisins and semolina. Mchoui, made of pit-roasted mutton is also very popular including the kab-el-ghzal, which are pastries made of almonds. The consumption of mint tea with fresh mint, sugar and green tea is an integral part of the social courtesy of Morocco.
Although drinks are not as strictly controlled as in other Islamic countries, they are quite expensive and available in licensed restaurants and bars only. The supply of hard liquor is limited to selected brands available in the bigger cities.
Along with a variety of Moroccan cuisine, most of the hotels, restaurants and cafes sell various French dishes due to a strong French influence over the country. Italian and Spanish meals are also available here. Three course fixed menus are comparatively cheaper.
